Despite it’s rather unappetizing appearance when first plucked from the ground, beets are a garden gem that have been cultivated for hundreds of years, all over the world! Originally used for primarily medicinal purposes, the beet has developed into a staple of gardens throughout America, and they are so simple to grow!
Choose a spot that is in the full sun and has well-drained soil.
Plant seeds outdoors in garden beds about 4 weeks BEFORE the last frost. Beets are cold-hardy, so there’s no need to worry about them getting a little chilly. If you want a steady supply, continue more plantings every 2 weeks to create a stream of produce in the summer.
Make sure to thin the seedlings to 2-4 inches apart, keeping in mind that most beet seeds are going to sprout more than 1 plant stalk, and taking into account that mature beets plants will grow larger than young, tender plants will. Space according to your desired growth time.
For more tender, sweet beets, harvest before the roots get over 4 inches in diameter.
